Soba made only with buckwheat flour, without wheat flour, is called “juuwari soba(十割蕎麦).
The term “juuwari soba(十割蕎麦)” is a relatively recent term; before that, it was called “kiko-uchi(生粉打ち)” soba.
Juuwari Soba(十割蕎麦) is the most important and representative type of Japanese buckwheat noodles.
Juuwari Soba(十割蕎麦) can be broadly classified into three categories.
Genbiri (玄挽き) Juuwari Soba
Msrunuki (丸抜き) Juuwari Soba
Sarashina Juuwari Soba
Let me explain about each type of soba.
Genbiki (玄挽き)Juuwari Soba
Genbiki(玄挽き)” means milling buckwheat seeds in their black hulls by placing them directly into a stone mill. The buckwheat noodles made from buckwheat flour thus produced are called “Genbiki-no-Juuwari Soba” (玄挽きの十割蕎麦).
Genbun-ground buckwheat tends to be black in color because it contains pieces of hulls.
Depending on the method of milling, some soba noodles have a darker black color, while others have a less dark color, and the taste can vary greatly depending on the person who makes them.
If well made, this soba can be very tasty, but if it is not well made, it will be too bitter and inedible.
Marunuki(丸抜き) Juuwari Soba
Marunuki” refers to the buckwheat seed with the black hulls that surround the buckwheat seed removed. During the season of new buckwheat, when the black husk is removed, the inner sweet skin of the buckwheat is a beautiful green color. When milled buckwheat flour is used to make buckwheat noodles, the noodles also take on a subtle green color, making them beautiful.
However, noodles that are too dark green are not very tasty.
Well-made “Marunukii Juuwari Soba” is very tasty, but it is very difficult to find it.
Sarashina Juuwari Soba
The buckwheat flour made by refining only the starchy part in the center of the buckwheat seed is called “Sarashina flour. Sarashina-no-Juuwari Soba” is made from this flour without wheat flour or other binders. It is very difficult to make thin and long noodles using only starchy flour.
This soba is also difficult to encounter, but since “Sarashina flour” lacks the unique aroma and taste of soba, it depends on each person whether he or she finds it delicious to eat.
